Mrs. Yarnall’s Maryland Waffles

In 1911, The Baltimore Sun ran a recipe contest.  The recipe for homemade waffles won first prize in the griddle cakes category.  The recipe was submitted by Mrs. J. E. Yarnall of 14 West Saratoga Street.  The recipe is as follows

Original Recipe

Maryland Waffles.  One and one-half cups boiling water, 1/2 cup white cornmeal, 1 1/2 cups milk, 2 cups flour, 3 tablespoonfuls sugar, 3 teaspoonfuls baking powder, 1 1/2 teaspoonfuls salt, 2 eggs beaten separately, 2 tablespoonfuls melted butter.  Cook the meal in the boiling water 20 minutes; add the milk, then flour, sugar, baking powder and salt sifted together thoroughly, yolks of the eggs beaten until thick, also butter and the whites of the eggs beaten stiff.  Beat all well together and when very light fry on a hot, well greased waffle-iron.  Serve with maple syrup.  These are also very nice served with fried or fricasseed chicken.

Ingredients

  • 1 1/2 cups water

  • 2 large eggs separated yolks and white; beaten
  • 2 tbsp butter melted
