Mrs. Richardson’s Fried Eggs With Cheese

Fried eggs with cheese isn’t so much a recipe as it is an idea.  These are simple to make and on a lazy Sunday morning, quick and easy sounds wonderful.

Normally when I am making eggs and toast, I crack the eggs I need into a pan, season with salt and pepper and then add a little water to the side and put the lid on.  This has been the only way I have found that works for me to cook the eggs on top and not leave slimy whites.  Having the water in the pan with the lid on basically steams the top of the eggs.  Adding cheese to the eggs solved the problem of having the tops cook.  The cheese melted and set the tops of the eggs.  I made my fried eggs with sharp cheddar cheese.  Sharp cheddar cheese is in my top 5 favorite cheeses.

The simplicity of eggs and toast is great.  The cost of this recipe comes to $2.50 if you are using 8 eggs and serving them on a slice of toast.  I added a side of fruit for my kids this morning, so their meal came out to less than 80 cents each.

Original Recipe

Fried Eggs With Cheese.  Break eight eggs in a frying pan and one cup of grated cheese.  Sprinkle over the eggs and season with salt and pepper.  These are nice for breakfast – Mrs. John D. Richardson, Liberty, Ind. R. R. 5.

  • 8 large eggs
  • 1 cup cheddar cheese
  • 8 pieces toast
  • salt & pepper to taste


  1. Make the toast and have ready on plates. Crack the eggs into a pan over medium heat. Sprinkle with cheese and season with salt and pepper. Cook for several minutes until the whites of the eggs have set. Serve on toast.
