This pancake recipe is simple to throw together and as the title states, they are delicious pancakes. This pancake is a lot thinner than some of the other pancake recipes I’ve tried from around this time period. The recipe is from Mrs. Belle De Graf. She was a cooking authority in the early 1900s in California. In 1919, The San Francisco Chronicle feature her recipes along with a recipe contest for ladies in the San Francisco area.
To this date, I have gathered over 250 of Mrs. De Graf’s recipes and all of the advice she gives for making various foods. I am working on compiling her advice and tips because I think they have great value and will be of interest to some. I am also working on researching her history and plan to create a page for her and her recipes once I complete the project. So far one of the recipes I have found very cute is called “Cheese Dreams”. Can you guess what they are? No? A grilled cheese sandwich. From now on in our house, grilled cheese is now cheese dreams.
Back to the pancakes….one of the great things about these is they cooked quickly and evenly. Some of the thicker pancakes have been hard to cook through and not have them too dark on the outside. When I cook pancakes, I use a 1/4 cup measuring cup to make all the pancakes the same size.
I know I’ve probably said it more than a few times, but pancakes are so cheap to make. This recipe made about 15 pancakes for a total cost of 85 cents. With a serving size of two, this breakfast would cost 12 cents per person. Of course, a little more would be added for butter and syrup. Add a side of fruit and eggs to make a complete breakfast.
Two cups flour, 2 teaspoons baking powder, 2 tablespoons sugar, 2 eggs, 2 cups sweet milk, little salt, little melted lard; beat thoroughly and fry on hot griddle
Mrs. De Graf's Delicious Pancakes
A pancake recipe from 1919
- 2 cups flour
- 2 tsp baking powder
- 2 tbsp sugar
- 2 large eggs
- 2 cups milk
- 1 tsp salt
- 1 tsp butter
Mix all ingredients well and fry on a hot griddle; using 1/4 of batter per pancake
