Ms. Gale’s Vanilla Cake
This recipe has the name of Nagle Cake. I’ve never heard of a Nagle Cake, so we are going with Vanilla Cake since it is flavored with vanilla. One thing I find interesting is the frosting for this cake. It is a mixture of powdered sugar, milk and lemon extract. That frosting is then topped with melted chocolate. This is another recipe that contains saleratus. It is baking soda.
Vanilla Cake Recipe
One-half cup butter, 1 cup of sugar, 1 ½ cups of flour, 3 eggs, 3 tablespoonfuls milk, 1 teaspoonful of cream of tartar, 1 ½ teaspoonfuls of saleratus.
Mix cream of tartar with the flour, stir butter and sugar to a cream. Beat eggs until light and creamy. Add eggs to butter and sugar and beat all together for 5 minutes. Add the flour and stir until thoroughly blended. Flavor with vanilla. When baked turn out on a cake rack. Let cool before frosting.
Frosting: 4 tablespoonfuls of confectioners sugar, with just enough milk to soften it to spread; ½ teaspoonful of lemon extract. Spread evenly and quickly. Melt 1 square of chocolate and while warm spread over the white frosting. Let stand a few hours without cutting.
