Mrs. Lipman’s Calves Liver Dumpling
The liver dumpling recipe is made with minced liver. It sounds interesting, mainly because it is baked with egg yolks and egg whites. This recipe sounds like some of the raised omelet recipes I have seen from this same time period. If anyone makes this recipe, let me know how it turns out in the comments.
Calves Liver Dumpling Recipe
One pound minced liver, one-half pound goose grease, yolks of eight eggs, four ounces soaked bread, salt, pepper, nutmeg, parsley, small fine onions and mushrooms, whites of four eggs beaten stiff. Bake in pan.

- 1/2 lb goose grease
- 8 ea eggs separated
- 4 oz soaked bread
- 1 small onion chopped fine
- 1 cup mushrooms chopped fine
- salt to taste
- pepper to taste
- nutmeg to taste
- parsley to taste
Instructions
