Ms. Simons’ Celery Sandwiches
This celery recipe reminds me of my Great Grandmother. Not because she made anything like this for me, but every sandwich she made came on buttered bread. She was born in 1908. Sometimes, when I read through these recipes I wonder if she ever made similar things. I know my Grandma had liver and onions growing up, but not much else about food was really mentioned that I can remember. This is one of the reasons I started this blog. I want to share these recipes and link them back to the families they belong to.
This celery recipe sounds very easy to make and sounds interesting. This would also be easy to add a protein to like chicken or chopped eggs.
Celery Sandwich Recipe
Mince one cup celery and one tablespoon apples, nuts or olives very fine, mixing thoroughly with two tablespoons mayonnaise dressing. Spread white bread with butter, then the above filling: place another piece of bread on top and cut in any shape desired.

Ingredients
- 1 cup celery minced
- 1 tbsp apples minced
- 1 tbsp nuts or olives; chopped fine
- 2 tbsp mayonnaise
- 4 slices bread spread with butter
Instructions
