Mrs. Shermantine’s Cucumber and Onion Salad

This cucumber and onion salad recipe is simple to put together, but it will take some prep time.   The recipe requires two hours to let the cucumbers and onions sit.  An ingredient that is in the recipe is French dressing.  I don’t think this is the standard red French dressing that we know today.  There is a French dressing recipe that I have posted that is from 1904 you might want to check out.

Cucumber and Onion Salad Recipe

If cucumbers are treated in this way no ill effects will be felt: Take three good sized cucumbers and peel and slice very thin. Put in a bowl and cover with a thin layer of salt. Cover and let stand two hours. Take a good sized onion and peel and slice in rounds; then cut each round in half and lay in vinegar two hours. When ready to make salad, squeeze out all the juice possible from cucumbers. Drain onions and mix with French dressing. Have a bowl ready with a bed of crisp lettuce leaves. Put in a layer of cucumbers, then one of onions, until all are used. Tomatoes can be used in place of onions. It is very important to salt and squeeze the juice from cucumbers.

Ingredients

  • 3 large cucumbers
  • 1 large onion
  • vinegar enough to cover onions
  • French dressing enough to mix with onions

Instructions
