This gumbo soup recipe features chicken and bacon.  When I think of sweet herbs that would pair well with chicken, basil and bay leaf are the first ones that come to mind.  Others that would work well would be sage, marjoram and thyme.

Southern Gumbo Soup

Fry 1 chicken, when cut up, to a light brown; also 2 slices of bacon; pour on them 3 quarts of boiling water, add 1 onion and some sweet herbs tied in a rag; simmer them gently 2 hours and a half; strain of the liquor; take off the fat and then put the bacon and chicken cut into small pieces into the liquid; add 1/2 teacup of rice; boil all 1/2 hour, and just before serving add a glass of wine and a dozen oysters with their juice.

Cook Time 3 hours

Ingredients

  • 1 whole chicken cut up and fried light brown
  • 2 slices bacon
  • 3 quarts water boiling
  • 1 ea onion
  • 1 bunch sweet herbs (basil, bay leaf, marjoram, sage, thyme etc.)
  • 1/2 cup white rice
  • 5 oz wine
  • 1 dozen oysters with their juice

Instructions

  1. Fry 1 chicken, when cut up, to a light brown; also 2 slices of bacon

  2. Pour on them 3 quarts of boiling water, add 1 onion and some sweet herbs tied in a rag; simmer them gently 2 hours and a half

  3. Strain of the liquor; take off the fat and then put the bacon and chicken cut into small pieces into the liquid

  4. Add 1/2 teacup of rice; boil all 1/2 hour

  5. Just before serving add a glass of wine and a dozen oysters with their juice.
