Homemade muffin recipe from 1913

  • 2 cups flour
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1 tbsp butter
  • 1 cup milk


  1. Sift together two cups best pastry flour, already once sifted; one even teaspoon cream of tartar, and a scant half teaspoon soda.

  2. Rub a generous tablespoon butter through the four until it feels fine and granulated.

  3. Beat an egg thoroughly, add to it one cup sweet milk and turn into the flour and other ingredients. Beat thoroughly.

  4. When smooth and light put into well greased muffin rings, filling about two-thirds full.

  5. Bake 20 minutes in a 400 degree oven.
